SUGGESTIONS FOR ULCERS*

➤ Potatoes. Choose Yukon Gold, cooked lightly to maintain
their crunchy texture, and eat once or twice a day with lightly
cooked vegetables. The Irish who lived on a diet of potatoes
left the skins on when they boiled them and used the water as
a base for soup.
➤ Gelatin. Use one-half to one ounce in liquid or sprinkled on
food three times daily. (See Resources.) This is an excellent
source of mucilage.
➤ Raw vegetables. Eat with every meal to provide the mucilage
and water needed for digestion.
➤ Raw cabbage juice. Drink two glasses a day or as much as
needed.
➤ Bananas or plantains. Eat as many as you comfortably can
every day.
➤ Vitamin E (400 to 1,600 units/day). Researchers Jon A. Kangas,
Ph.D., K. Michael Schmidt, Ph.D., and George F. Solomon, M.D.,
reported in The American Journal for Clinical Nutrition in
September 1972 that of two groups of mice subjected to stress,
the group given 100 units of vitamin E daily had far fewer and
less severe ulcers than the control group.^8
➤ Vitamin A (25,000 to 50,000 units/day). Experiments
conducted and written up by T. L. Harris and originally
published in the Society for Experimental Biology and Medicine,
March 1947, show that rats given vitamin A as well as vitamin E
had no ulcers at autopsy.^9 Vitamin A helps build mucous
membranes.
➤ Vitamin C (500 mg/day). In building up collagen, the “glue”
that holds the epithelial cells together on the surface of organs,
vitamin C helps ensure the integrity of the digestive tract lining.
