Take about ¼ lb of taramá and
pound it in a mortar with a clove
or two of garlic, lemon juice, and
about 4 tablespoons each of olive
oil and cold water, added
alternately and very slowly, until
the preparation has the consistency
of a thick and smooth purée.
Taramásalata is served with bread
or hot toast.
