QUINCE AND ORANGE SALAD


Mix sliced oranges with a few
quarters of stewed sliced quinces
(see recipe on p. 171) and serve in
wine goblets.


PEACHES IN WINE


Yellow-fleshed Italian or French
peaches are best for this dish.


Allow a minimum of one large
peach per person. If the fruit is at
all hard or unripe immerse them
for a minute or so in boiling water.
