biocatalytic reaction, rkin. This happens since the surface substrate concentration is lower
than the bulk substrate concentration, thus resulting in a smaller inhibition effect.
The enzymatic isomerization of glucose into fructose is probably the most successful
industrial application of immobilised enzyme technology (Olsen, 1995). This reaction can
be described by a reversible form of Michaelis-Menten kinetics (Lee et al., 1976) which
does not fit the general equation (9). Considering the reversible reaction S↔P, the rate
