SLICE
YUCA
Prepping yuca root
is similar to prepping
pineapple. First you
peel it. Then you cut
out the woody core.
Here’s how to do it.
- Slice off the tapered
ends. Then cut the root
into shorter, 3- to 4-inch
segments.
- Stand a single
segment on one of its
flat ends. Using a sharp
chef’s knife, carefully
slice down the sides,
working your way around
the segment until all the
skin is removed.
- Quarter the segment
lengthwise to expose the
woody core. (You’ll have
four long wedges.)
- Stand one wedge
upright and slice away
the woody core.
- Repeat steps 2–4 with
the remaining segments.
