he third iteration of our Maritimo
Masterclass series comes courtesy of a
Sanctuary Cove institution. Following
up from Matt Hart's fanciful fusion cuisine and
Kaitlyn Tremblay's lessons on the finer side of
G.H. Mumm, we've embarked on a new course
with Chef Gary Jones.
Chef Gary's namesake Jonez on Food is said
by many to be the premier Sanctuary Cove
eatery. Most evenings the restaurant will be
booked out by a crowd that's mainly composed of
locals, which is always a sign of a quality eatery.
The key to Gary's success has been garnered
from almost five decades in the business, during
which time he's earned a Michelin Star and
spent a period as the head chef at Brisbane
destination Michael's. All this has culminated
in his signature blend of contemporary styled
cuisine that takes cues from the classic British
flavours of his early years.
Chef Gary's enthusiasm for local, seasonal
ingredients translates perfectly to a coastal-
cruising lifestyle, and the Maritimo X50 proved
to be the ideal stage for him to prepare a
selection of superlative dishes to share with the
Trade-a-Boat crew.
Throughout this collection of recipes, Chef
Gary will take us through a range of delicious
dishes that any capable cook can whip up in the
comfort of their own galley. From a fiendishly
tasty whole ocean trout to a canapé plate fit
to entertain Sanctuary Cove's finest, these
recipe's will open you up to bold new flavours
made using staple ingredients with flourishes of
complementary tastes.
