Jaffle pans are available from select
hardware and baking stores. You can
also use a snackwich pan if you like.

1 Heat a splash of oil and a knob of butter on medium-high and
sauté the onions for about 30 minutes, stirring occasionally until
caramelised. (Add a splash of water if necessary to prevent it sticking
to the pan.) Season.
2 Spread butter on the bread and sandwich two slices together with
Cheddar, roast beef, caramelised onion and gherkins. Heat and
grease a jaffle pan and toast the sandwiches for about 10 minutes
or until golden all over.

2 onions, halved and slice

8 slices white bread
150g Cheddar, grated
4 slices roast beef
60ml gherkins, sliced
