SERVES 4


Ingredients



  • 1 tbsp olive oil, divided

  • 225g/8oz cubed seitan

  • 6 tbsp BBQ sauce, divided

  • Whole Wheat Flax Pizza Crust (see right)

  • ¼ red onion, sliced

  • 113g/4oz fresh mozzarella,
    very thinly sliced

  • 28g/1oz goat cheese, crumbled
    (or substitute feta or blue cheese,
    if desired)

  • 25g/½ cup chopped cilantro


Method


1. Preheat the oven to 400°F (200°C). If you have one, place a pizza stone in the oven
while it preheats (this will help you get a crispier crust).
2. Heat ½ tablespoon of olive oil in a nonstick skillet over medium heat. Add the seitan and
cook for 5 minutes until brown. Pour in 2 tablespoons of the BBQ sauce and cook for another
2 minutes, until the seitan soaks up the majority of the liquid. Remove from the heat.
3. Roll out the dough into a 12-inch circle. I like to do this on parchment paper so it
doesn’t stick to the surface. Brush on the remaining ½ tablespoon of olive oil, then
brush on the remaining BBQ sauce, leaving about a ½-inch border. Top with the red
onion, mozzarella slices, and BBQ seitan. Sprinkle with the crumbled goat cheese.
4. Transfer the crust to the preheated baking pan. Bake for 17 minutes, then broil for 2
to 3 minutes. Top with chopped fresh cilantro.
