EASY SKILLET
SNOW PEAS
Melt 1 Tbsp. butter in a
large skillet over medium
heat. Add 1 Tbsp. minced
shallot or onion; cook
until fragrant and
softened, about 1 minute.
Add 12 oz. fresh snow
peas or snap peas; cook
on medium-high heat,
stirring, about 3 minutes.
Add 2 Tbsp. water, cover,
and cook until crisp-
tender, about 3 minutes
more. Season with salt
and black pepper.

ROASTED SWEET
POTATO FRIES
Cut 2 sweet potatoes
lengthwise into French
fry-style strips. Whisk
together 2 Tbsp. olive
oil; ½ tsp. each garlic
powder and black pepper;
and ¼ tsp. each salt and
paprika. Add strips, toss
to coat, and spread evenly
on a baking sheet. Roast
in a 450°F oven, turning
over halfway through
with a spatula, until crisp,
15 to 20 minutes.

GARLIC ANGEL
HAIR PASTA
Cook 16 oz. angel hair
pasta according to
package directions;
drain. Warm 1 Tbsp.
butter, 1 Tbsp. olive oil,
and 3 smashed garlic
cloves in a skillet over
medium-low heat, just
until fragrant. Remove
garlic with a slotted spoon.
Add pasta; cook, tossing,
until evenly coated and
warmed through, about
1 minute. Season with
salt, black pepper, and
grated Parmesan cheese.
