HONEY& BANANACHEESECAKE
WITHBANANA HONEYCOMB

Beginthisrecipeat least4 hoursahead.
You will need a sugar thermometer.


500gcreamcheese,chopped, softened
350gfreshricotta
250ggood-quality mascarpone
1 tbscornflour
200grunnyhoney
3 (about300g)ripebananas, mashed
3 tspvanillaextract
2 eggs,lightlybeaten
200ml creme fraiche, lightly whipped


PASTRY
1 cup(150g)plainflour

75g unsalted butter, chopped, softened
BANANAHONEYCOMB
(^1) / 2 cup(110g)castersugar
150mlrunnyhoney
(^1) / 2 tspbicarbsoda
50g finely chopped banana chips
Preheatovento180°C.Grease a 22cm
springformcakepan.
Forthepastry,placebutter,caster
sugar,flourand2 tspcoldwaterin a stand
mixerfittedwiththepaddleattachment
andbeatuntilmixturecomestogether.
Pressevenlyintobaseofpreparedpan
andsmoothusingthebackofa spoon.
Placeona trayin theovenandbakefor
30 minutesoruntilgolden.Removefrom
ovenandcool.Reduceovento160°C.
Cleanmixerandaddcreamcheese.
Beatuntilsmooth.Addricotta,
mascarpone,cornflour,honey,banana
andvanilla,andbeattocombine.Beat
in eggsuntilsmoothandcombined.
Pouroverpastrybaseandbakefor
1 hour 10 minutesoruntilsetwitha
gentlewobblein thecentre.Turnoff
ovenandcoolcompletelyin oven, then
chillfor4 hoursoruntilcold.
Forthehoneycomb,greasea 20cmx
30cmlamingtonpanandlinewithbaking
paper.Placesugar,honeyand2 tbswater
in a largesaucepanovermedium-lowheat
and stir to dissolve sugar. Increase heat to
highandbringtotheboil.Cook,without
stirring,for5 minutesoruntildeepgolden
andit reaches154°Cona sugar
thermometer.Removefromheatandallow
bubblestosubside.Workingquickly,add
bicarb,whiskingtocombine(honeycomb
willfoam).Thenwhiskin thebananachips.
Quicklypourintopreparedpanand
scatterwith^1 / 2 tspsaltflakes.Setaside
tocoolcompletely.Whenreadytoserve,
removehoneycombfrompan,finelychop.
Spreadcremefraicheovercake.Scatter
honeycomb over the cake and serve.

tartpan.Chilluntilneeded.
Placeremaining100gmeltedbutter
in a saucepanwithbrownsugarover
medium-lowheat.Stiruntilsugarhas
dissolved.Addthickenedcreamand
simmerfor10-12minutesoruntilthick.
Meanwhile,soakgelatineleavesin a bowl
ofcoldwaterfor5 minutestosoften.
Squeezeoutexcesswaterandstirintohot
cream mixture to dissolve. Remove from
heatandcooltoroomtemperature.
Placecreamcheesein thebowlofa
standmixerwiththewhiskattachmentand
whiskuntilsmooth.Graduallyaddcooled
creammixtureandwhiskuntilcombined.
Pourintochilledtartpanandrefrigerate
for6 hoursuntilfirmandset.
Meanwhileforthecrumble,preheat
ovento180°C.Linea bakingtraywith

paddleattachment.Beatgentlyfor1-2
minutesoruntila smoothdough.Add
