QUKE‘PICCALILLI’PICKLES
MAKES1 X 800MLJAR
Begin this recipe at least 2 days ahead.


2 tspeachblackandyellow mustard seeds
1 tspgroundturmeric
Pinchgroundnutmeg
2 eschalots,thinly sliced
2 bayleaves
2 tbsmustardoil
2 cups(500ml)whitevinegar


(^1) / 2 cup(110g)castersugar
2 x 250g packets Qukes, halved lengthways
Placemustardseeds,turmeric,nutmeg,eschalot,bayleaves,
mustardoil,vinegarandsugarin a saucepanoverhighheatand
bringtotheboil.Removefromheatandadd1 tbssaltflakes.
Coolslightly.PlaceQukesin a largesterilisedjarandpour
vinegarmixtureoverthetoptocompletelysubmerge(add
morevinegarif needed).Coverwitha lidandinverttocreate
a heatseal.Turnbackupright.Storefor2-3daysbeforeeating.
Qukescanbestored up to 6 months unopened. Refrigerate
after opening.
