garlic and Tuscan seasoning. Cook, stirring

andbreadcrumbs.Setaside until
cooledcompletely.
Oncemixturehascooled,crumblein
themincewith1 eggandmixwellto
combine.Seasonanddividemixture in
half.Setasideuntilreadytouse.
Preheatovento200°C.Grease2 large
oventraysandlinewithbakingpaper.
Workingwith1 puffpastrysheetat a time,
placea portionofmincedownthecentre
ofpastryandshapeintoa 5cm-thicklog.
Brushedgeswitheggwashandrollupto
enclosefilling.Brushwitheggwashand
evenlyplacefivesageleavesoverthetop.
Lay1 sheetoffilopastryona cleanwork
surfaceandbrushwithextrameltedbutter
andseason.Placesausagerollontothe
filopastrysheetsage-sideup,parallelto
oneshortedge.Trimfilopastrytomatch
thelengthofthesausageroll.Rollup
tightlytoenclosein a singlelayer.Trim
excessfiloanddiscard.Placeonprepared
trays,seam-sidedown,makingsurethe
sageleavesareontop.Brushwithmore
meltedbutterandscatterwithseasalt
flakes.Repeatwithremainingpuffpastry,
mincemixtureandfilopastry.Bake for
30-35minutesoruntilgolden.
Meanwhile,forthegravy,heatthe
butterin a smallnon-sticksaucepan.When
thebutterbeginstofoam,stirin theflour.
Cook,stirringfor3-4minutesoruntilflour
is deepgoldenbrown.Graduallywhiskin
thestockuntilsmoothandcombined.
Reduceheattoverylowandcook,stirring
frequentlyfora further5 minutestocook
outflour.Keepwarmuntilreadytoserve.
Removesausagerollsfromtheoven
andcutintodesiredpieces.Serve
immediatelywith gravy alongside.
