This board is a feast for the eyes, so
choose cheeses that are vibrant and
eye-catching. Showcase a range of
textures and colours to give plenty
of visual diversity. There are countless
cheeses out there with exciting,
colourful rinds and intriguing shapes.
The cheese Piper’s Pyramide
(Capriole Goat Cheese; Greenville,
Indiana, USA).
A velvety white rind dusted with
smoked paprika protects the bright
goat’s milk paste within. The texture
is fudgy, while the flavour is clean yet
earthy – and there is a thin line of
smoked paprika running through
the centre, too.

The cheese Fleur Verte
(La Chèvrefeuille; France).
This bright white, soft goat’s milk
cheese is dusted with vibrant green
herbs and pink peppercorns. Fresh,
lemony and light, its topping of dried
thyme and tarragon adds a delicate
herbaceous backbone. This is a
cheese that’s easy to spread on everything,
from bread to crackers and vegetable crudités.

    The cheese Red Rock (Roelli Cheese Haus; Shullsburg,

    The mottled tan-white natural rind of this rectangular-shaped
    cheese bears no resemblance to its interior: a vibrant
    burnt-orange paste jutted with straight lines of
    blue mould. The flavour is mild and creamy
    and the blue-green mould, penicillium
    roqueforti (like that of a blue cheese),
    adds a tinge of piquancy.

The cheese Original Blue (Point Reyes Farmstead Cheese
Co; Tomales Bay, California, USA).
This white wheel, criss-crossed by lines of azure blue mould,
stands out in any setting. It’s made with raw cow’s milk from
a closed herd that grazes the Giacomini family’s pastures.

The cheese Mimolette (Isigny Sainte-Mère; France).
Referred to as the ‘cantaloupe cheese’, this singular cow’s
milk wheel, with its orange paste and craggy
brown rind, is a crowd-pleaser. The rind is part
of its charm, and the orange interior is boosted
by the addition of annatto (a natural dye made
from the seed of the achiote tree).
