CARAMELIZED


PINEAPPLE,
GINGER &
SESAME CRUMBLE


MAKES 4 SERVINGS
HANDS-ON TIME 15 MINUTES
TOTAL TIME 35 MINUTES


8  pineapple slices
(cut ½-inch thick)
¼ cup brown sugar, divided
2 tbsp unsalted butter
½ cup orange juice, divided
½ cup granola
2 tbsp each white and black
sesame seeds
2 tbsp unsalted butter, melted
1 tsp grated fresh ginger


Spread pineapple slices on cutting
board and sprinkle with 2 tbsp of
the sugar. In large saucepan, melt
butter on medium heat; add pine-
apple slices and cook for 2 min utes
on each side. Add 2 tbsp orange
juice and stir until all the sugar
has dissolved.
In medium bowl, mix together
remaining sugar, granola, sesame
seeds, melted butter and ginger.
Preheat oven to 350°F. Lay
pineapple slices in 13- x 9-inch
baking dish; pour in remaining
orange juice. Sprinkle with sesame
seed mixture and bake until top
is browned, about 20 minutes.


PER SERVING about 350 cal, 5 g pro, 19 g total fat
(8 g sat. fat), 40 g carb (4 g dietary fibre, 28 g
sugar), 30 mg chol, 11 mg sodium.
