uniquepropertiesofthisspecialterroir.
Unfortunately,therearemass-
producedmanchegocheesesthatlack
a reflectionofplace.It is worththehunt
tofindtherealdeal!Thebestvarietyis
madefroma singleflockofsheepand
hasa naturalrind,anivory-coloured
interioranda distinctlysweetandnutty
finish,withjusta hintofthegrasses
and wild shrubs native to the region.

Preheata lightlygreasedhooded
barbecueorchargrillpantohigh.
Combinepeppersandmayonnaise
ina bowl,andseason.Setaside.
Peelbackcornhusksandremovesilks.
Leavethehusksintactat the base and tie
withkitchenstring.
Placeeachcobonthegrillsothehusks
protrudeouttoavoidburningthemand
closethebarbecuehood.Turnthecorn
abouta quarterofthewayafter1 minute,
andreclosethehood.Continuethisevery
minutefor6-8minutesuntilcornis golden
andspeckledwithblackkernels.If using
a chargrillpanit maytakea bitlonger.
Removecornfrombarbecue,immediately
brushwithchipotlemayonnaiseand
generouslysprinklewith manchego
before devouring!

beeswax.Placein anairtightcontainerin
thevegetabledrawerin thefridgesoit
doesn’t dry out, and eat within two weeks.
