Easiest-Ever
Stock

Let turkey bones
simmer in the slow
cooker overnight

TURKEY STOCK
Place 1 turkey carcass (from
a 5-lb. turkey) in a 4- to 6-qt.
slow cooker. Add 8 cups water,
3 large carrots and celery
stalks (cut into 3-inch pieces),
and 1 medium onion (cut into
8 wedges). Cover and cook
until stock develops a rich
flavor and reduces slightly,
on HIGH 5 hours or on LOW 8
hours. Strain stock, discarding
solids. Transfer to storage
containers; cool completely,
about 1 hour. Seal and store
in refrigerator up to 1 week
or in freezer up to 2 months.
MAKES 7 TO 7 1/2 CUPS - ACTIVE
10 MIN. - TOTAL 6 HOURS, 10 MIN.

FRUIT-AND-NUT TURKEY SALAD


Prepare recipe as directed,
stirring 1 cup grapes, 1 cup
chopped candied pecans,
and 1 Tbsp. chopped
fresh tarragon into
mayonnaise mixture.

PICKLE-AND-DILL TURKEY SALAD


Prepare recipe as directed,
stirring 2/3 cup chopped
bread-and-butter pickles,
2 Tbsp. chopped fresh dill,
and 1 tsp. celery seeds into
mayonnaise mixture. å

GOLDEN CURRY TURKEY SALAD


Prepare recipe as directed,
stirring 2/3 cup golden raisins,
1/2 cup chopped roasted salted
cashews, 2 tsp. curry powder,
and 1 tsp. granulated sugar
into mayonnaise mixture.

Dressing
adheres better
to shredded
(not chopped)
turkey.

Mayo and sour

the dressing

Let’s Talk Turkey Salad

The annual day-after sandwich gets a tasty twist

MIX IT UP Use our classic turkey salad (above) as a starting point, and add these creative stir-ins.

Stir together 1/2 cup mayonnaise; 2 Tbsp. each sour cream and chopped fresh flat-leaf parsley;
1 tsp. each apple cider vinegar, Dijon mustard, and kosher salt; and 1/4 tsp. black pepper in a
large bowl. Fold in 3/4 cup finely chopped celery and 1/4 cup finely chopped shallot. Fold mixture
together with 4 cups shredded cooked turkey breast until fully coated. Store in an airtight
container in refrigerator up to 4 days. SERVES 10 - ACTIVE 10 MIN. - TOTAL 10 MIN.

Apple cider
