    SPREADmeltedchocolateevenlyovera coldsurface,suchasa flatoventray,a laminated
    choppingboard,or,bestof all, marble. Leave to almost set at room temperature.

    THEREaremanywaysofmakingcurls;herewe’veuseda melonballer‒justdragthe
    ballersmoothlyandevenlyacross the surface of the chocolate. Remember, you can
    alwaysre-meltyourmistakes.

  3. USINGCURLS
    THISspectacularlookingcakelooksfarmoredifficult
    thanit reallyis.Cuta mudcakemadeina largecakepan
    intoa star-shape,spreadwithganache, then top with
    whiteanddarkchocolate curls.

  4. MAKINGWAVES
    CUTouta circleofbakingpaper,thesamesizeasthe
    topofthecakeyouwanttodecorate,thencut it into four pieces. Using a small spatula,
    spreadeachpiecewithmelted chocolate.

    LINEupcylindricalshapesoverwhichtodrythewaves



  • –weusedtwocandles.Carefullypickupeachchocolate
    wavewhiletheyarestillsoft,anddrapethem over the

    HAVEthecakeicedandreadytoposition
    thebands.Whenthechocolatestripsare
    startingtoset,liftthestripsandcarefully
    wrapeachonearoundthesideofthe
    cake.Gentlypeelthepaperaway.

  4. FINISHINGTOUCHES
    WE’VEpositionedtwocakeswith
    scallopedbandsontopofeachother,then
    decoratedwithfreshmixedberries.Make
    surethatthechocolateinthescalloped
    bands on the cakes join up neatly.
