  1. Preheat oven to 350°. Spray a
    2½ -quart baking dish with cooking
    spray.

  2. In a large skillet, heat
    1 tablespoon oil over medium-high
    heat. Add half of sausage and half of
    potatoes. Cook, stirring occasionally,
    until lightly browned, about
    5 minutes. Spoon into a large bowl.
    Repeat procedure with remaining
    1 tablespoon oil, remaining sausage,
    and remaining potatoes. Add to
    sausage mixture in bowl. Stir in
    sour cream, pimientos, cheese,
    green onion, milk, mustard, salt,
    and eggs. Spoon into prepared pan.

  3. Bake until casserole is heated
    through and cheese is melted,
    about 30 minutes.
