5. 15-MINUTE SHAKSHUKA


There’s no reason comfort food as good as this can’t be quick. Simply sauté 1 cup each
chopped onion and green bell pepper in a skillet with 1 Tbsp. olive oil. Add a 24-oz. jar
red pasta sauce, ¼ cup water, and ¼ tsp. crushed red pepper. Bring to a simmer. Crack an
egg into a dry ⅓ -cup measuring cup. Press cup about ½ inch into sauce, then turn over to
let egg flow into the indentation. Repeat with 3 more eggs. Reduce heat to medium-low;
cook, covered, until egg whites are set and yolks are desired doneness, about 8 minutes.
Sprinkle servings with a little chopped Italian parsley and crumbled feta cheese.

Forget waiting for the pizza-delivery
guy! Preheat oven to 400°F. Cook 1 lb.
ground beef in a large cast-iron skillet
until no longer pink. Add 2 cups frozen
fire-roasted corn and a 24-oz. jar red
pasta sauce. Bring to a boil, then stir in
¾ cup shredded pepper Jack cheese.
Unroll an 11-oz. pkg. refrigerated
breadsticks and loosely weave on top
of filling. Sprinkle with pizza seasoning.
Bake until golden brown and bubbly,
20 to 25 minutes. Let stand 10 minutes.

gazpacho

Here’s a simple Spanish-inspired
version of the classic chilled soup. Stir
together a 24-oz. jar red pasta sauce,
2 cups water, 3 Tbsp. lemon juice, and
1 Tbsp. each sugar and olive oil in a large
bowl. Stir in a chopped cucumber,
1 cup chopped red and/or yellow bell
pepper, and ¼ cup each chopped red
onion and fresh basil. Season to taste
with hot sauce, salt, and pepper. Cover
and chill 2 to 3 hours to blend flavors.

a 12-oz. pkg. frozen meatballs, half
of a 24-oz. jar red pasta sauce, 1 tsp.
balsamic vinegar, and ¼ tsp. crushed
red pepper to a slow cooker. Cook,
covered, on High 2 hours or on
Low 4 hours. Serve on cocktail buns
topped with provolone cheese.
