GOT “REAL” MILK?

Bay Area biotech startup PERFECT DAY
recently launched a line of ice cream made
from “real” dairy that’s suitable for vegans.
The ice cream—which retails for $20 a pint and
sold out within hours of launching—is identical
to dairy down to the DNA, but created without
exploiting a single living cow. The company
says it plans to supply its first-of-its-kind vegan
dairy to manufacturers to create cheese, baked
goods, and ice cream. Wondering how you
make “real” dairy without a cow?

STEP 1. The DNA sequence from cow’s milk

is 3D printed and added to yeast

STEP 2. A fermentation process creates the

dairy proteins whey and casein

STEP 3. The whey and casein are added

to water (and other ingredients)

to craft DNA-identical dairy

In a new
sustainability report,
the New Zealand
government
is officially
recommending its
citizens switch to
a plant-based diet.
The findings by the
New Zealand Ministry
of Health identify
agriculture as the source
of nearly 50 percent of the
country’s greenhouse gas
emissions, and call for
increased access to less
resource-intensive, plant-
based meat alternatives.
Now that’s an idea we can
have some zeal about!

The number of plant-based
“eggs” food technology
company JUST has created
with its mung bean-based
JUST Egg. The vegan
product has even become
the leading liquid egg
product on the market,
according to data analysis
firm SPINS, beating out
chicken egg products.

EATING WHITE MEAT
IS NO HEALTHIER
THAN EATING
RED MEAT
when it comes to cholesterol,
according to new findings
published in The American
Journal of Clinical Nutrition.
The study observed more
than 100 people who ate
diets high in beef and pork
or chicken over a number of
weeks and found that levels
of LDL or “bad” cholesterol did
not change depending on the
type of meat consumed. The
researchers’ recommendation?
Switch to plant-based protein.
