beating well between each addition.
2 Add ½ the flour, cocoa and
buttermilk and combine. Repeat,
adding the remaining ingredients.
3 Spoon the mixture into the tins and
bake for 45 mins.
4 Melt the milk and dark chocolates
in 2 bowls, resting over pans of
simmering water each with 1tsp oil.
5 Tip dark chocolate into a margarine
tub, then drizzle in the milk chocolate
and swirl together with a skewer.
Chill for at least 1 hr.
6 To make the curls, tip the block of
chocolate on to a parchment-lined
tray. Drag a cheese slicer over the
chocolate to create huge curls. Put
on to the tray and chill.
7 Slice the bananas and squeeze on
the lemon juice. Meanwhile, stir the
mascarpone, icing sugar and vanilla
extract together until smooth.
8 Cool the cakes on a wire rack,
peeling away the lining paper. Just
before serving, put the cake on to a
serving plate, spread over ½ the
mascarpone filling, top with ½ the
well-drained bananas and ½ the
caramel. Repeat with another cake
layer and sandwich with the final cake.
Use a palette knife to arrange the
curls on top. Push the indoor sparklers
in the cake and light to serve.

for the cake:
250g unsalted butter, at room
temperature
225g light muscovado sugar
200g golden caster sugar
1tsp vanilla extract
4 large eggs
300g self-raising flour
75g cocoa
284ml carton buttermilk
for the decoration:
150g milk Belgian chocolate
200g bar dark chocolate (we
used Bournville)
2tsp vegetable oil
for the filling:
2 ripe small bananas
juice of 1 lemon
250g mascarpone
50g icing sugar, sieved
2tbsp vanilla extract
397g can caramel
you will need:
3 x 19cm sandwich tins, greased
and base lined
indoor sparklers
