20cm ovenproof frying pan or
cake tin (not loose-based)
1 Heattheovento220C/Gas7.
Gentlyheatthesugarinthepan
untilit dissolvesandturnsa golden
brown.Stirinthebutterandvanilla.
2 Putthefigsintothepanontopof
thecaramel,cut-sidedown,ina
singlelayertofitsnugly.If usinga
caketin,pourthecaramelintothe
tinandarrangethefigsontop.
3 Cutouta circleofpastryfromthe
sheet, a little larger than the pan or
tin.Drapeit overthefigsandtuck
thesidesdowntoenclosethefruit.
Prickthepastrywitha forkand
bakeintheovenfor 25 minsuntil
thepastryis risenandgolden.
4 Removefromtheovenandallow
tocoolfor5-10mins.Runa sharp
knifearoundtheedgeofthepastry,
puta servingpanonthetopofthe
panortinandturnthetartout.
