toppings(weusedfreeze-dried
raspberries,sesame seeds and
pistachionuts)
youwillalsoneed:
aheatproof,preferablymetal,bowl
a largerbowlfilledwithicewater
a thermometer (optional)

1 Laya largepieceofbaking
parchmentontoa baking tray or
marbleboard.
2 Totemperthechocolate:breakthe
darkchocolateintosmallpiecesand
placein a heatproofbowlsetabove
a panofbarelysimmeringwater(do
notallowthebowltouchthewater).
Letthechocolatemeltentirelythen
putthebowlintotheicewatertocool
(beverycarefulnottogetanywater

coolingit to26Candheatingit to
30C.Drizzlethewhitechocolate
overtheslabandmixthrough.
5 Whilethechocolateis wet,
sprinkleoverthetoppings.Leaveto
