1 smallpumpkin or queen squash
(about1kg)
1 tbspoliveoil,plusa little extra for
fryingthesageleaves
15gunsaltedbutter
1-2shallots,depending on their size,
finelychopped
1 garlicclove,crushed
100gbutternutsquash,peeled,
deseededandchopped into bite-
sizedcubes
150gArboriorisottorice
A smallbunchoffreshsage,half
roughlychopped,remaining leaves
reservedforgarnish
200mlwhitewine
400mlvegetable stock (gluten free,
if necessary)
30gParmesancheese,finelygrated
(orvegetarianalternative)
Salt and freshly ground black pepper

1 Preheattheovento200°C/fan180°C/
gasmark6.Startbyslicingoffthetop
ofthepumpkintomakea lidandplace
in a large,shallowroastingtin.Scoop
out the seeds and hollow out some of

thefleshtocreatethecontainerfor
therisotto.Rubthepumpkinwith
a tablespoonoftheoliveoiland
season.Placeintheroastingtinalong
withthelidandbakefor 35 minutes.
Removefromtheovenandsetaside.
2 Turntheovendownto170°C/
fan150°C/gasmark3½.Putthe
ovenproofdishintheoventowarm.
3 Meltthebutterin a mediumnon-
stickfryingpanovera mediumheat,
addtheshallotsandfryfor5-7minutes.
Addthegarlicandbutternutsquashand
stirwell,thenaddthericeandchopped
sage.Makesurealltheingredients
areevenlycoatedinthebutter.
4 Addthewineandstockandbring
uptoa gentlesimmer.Assoonasyou
havereachedthispoint,tiptherisotto
intotheovenproofdishandbake
uncoveredfor 30 minutes.Remove
fromtheovenandstirin theParmesan.
Spoontherisottointotheroasted
pumpkinandbakefor 15 minutes.
5 Whilethefilledpumpkinis warming
through,heata glugofoliveoilin a
non-stickpanandfry the sage leaves
overa highheat.
6 Beforeserving,toptherisottowith
sageleaves.Manoeuvrethepumpkin
ontoa plateorboardandfinishby
placing the lip on top at a jaunty angle.
