1 Heattheovento180C/Gas4. Place
thesweetpotatoslicesona trayand
drizzlewitholiveoil.Addthegarlic.
Roast for 30 mins. Remove then cool.

2 Slicetheleeksandfryin butterfor
2-4minsuntilsoftened.Remove
fromthepanandallowtocool.
3 Rollout⅔ofthepastryanduseto
linean18cmspring-form cake tin.
Chillfor 30 mins.
4 Pressthegarlictosqueezeoutthe
pulpandstirit throughthepotatoes.
Fillthepiewithlayersofsweetpotato,
pepper,leeks,sageandtheStilton.
5 Rolltheremainingpastryintoa
circletocoverthetopofthepie.
Crimptheedgestosealthencut
a crossin thetop.Decoratewith
leavescutfromtrimmings. Brush
withbeatenegg.
6 Chillfor 10 minswhileheatingthe
ovento220C/Gas7. Bakefor 10
mins.Reduceto200C/Gas6,and
bakefor 20 mins.Servehotorcold.
