1 mediumonion,thinlysliced
1 redpepper,deseeded and
finelysliced
1 teaspoonchilliflakes
1 teaspoongroundcumin
1 teaspoon sweet smoked paprika,
totaste
2 largeripetomatoes,chopped
2 x 400gtins of plum tomatoes,
chopped
8 organic,free-range eggs
50gfetacheese
2 tablespoons chopped coriander
leaves
flakyseasalt,freshlygroundblack
pepperanda pinchofsugar
sourdough bread, to serve
1 Preheatthe oven to 200°C/gas
mark6.
2 Sprinklethecarawayseedsinto
a 25cmheavy,ovenprooffrying
panandtoastovera mediumheat
for2-3minutesuntiltheseeds
becomea shadedarkerandsmell
fragrant.Addtheextravirginoliveoil
andcontinuetocookfora further
minute or two. Reduce the heat.
3 Addtheslicedonionandpepper
andcookfor5-8minutesuntilsoft
andjammy.Addthechilliflakes,
cuminandpaprikaandcookfor
a further3-4minutes,stirring.
4 Stirinthechoppedtomatoesand
cookfor5 minutesbeforeadding
thetinnedtomatoesanda pinchof
sugar.Bringslowlytotheboiland
seasonwithsaltandpepper.Reduce
theheattolowandsimmergently
for20-25minutesuntilthesauce
is thick,richanddelicious.
5 Takea woodenspoonandhollow
outeightlittle‘wells’in thesurfaceof
thesaucefortheeggs.Crackinthe
eggsand,takingcarenottobreak
theyolks,usea spoontoburythe
eggwhitesgentlyunderthesauce
- leavingtheyolksuncovered.
6 Crumblethefetaovertheegg
whites(nottheyolks)anddrizzle
withextravirginoliveoil.
7 Transferthepantotheovenand
bakefor5 minutesfor‘justset’yolks
and7-8minutesforharderyolks.
8 Removefromtheoven.Sprinkle
withplentyofcoriander,drizzlewith
extravirginoliveoilandseason
witha sprinklingofflakyseasalt.
9 Servewithlotsoffreshor toasted
sourdough for dipping.
