othernoodles)
2tbspsunflower oil, plus extra for
thenoodles
160gskinlesschickenbreasts
(optional),cutintobite-sizedchunks
80gTenderstembroccoli
8 babycorn,halvedlengthways
1 redpepper,deseededand sliced
2 clovesgarlic,crushed
2cmpieceofrootginger, peeled
andfinelygrated
2tbspsoysauce
1tsptoastedsesameoil
1 springonion,finelychopped
½redchilli,halvedlengthways,
deseededandthinlysliced(optional)
toasted sesame seeds, for sprinkling

1 Cookthenoodlesaccordingto
thepacketinstructions,drain,rinse
undercoldwater,drainandtoss
witha littlesunfloweroiltoprevent
themsticking.Leavetooneside.
2 Whilethenoodlesarecooking,heat
theoilin a largefryingpanorwok
overa highheat.Addthechicken,if
using,seasonandstir-fryfor3-4mins.
Removefromthepanandsetaside.
3 Addthebroccoli,babycorn,
redpepperand3tbspwaterto
thefryingpan,reducetheheatto
medium-highandfryfor5 mins,
tossingregularly,untilthewaterhas
evaporatedandthevegetablesare
beginningtosoften,butarestill
crunchy.Addthegarlicandginger
andfryfora further 30 secs.
4 Finally,returnthechicken(if using)
tothepanalongwiththenoodles,
soysauceandsesameoil.Tossand
fryfor1-2minsuntilthenoodlesare
hotandhavesoakeduptheliquid.

1 Heattheovento180C/Gas6.
Roastthegarlicclovesfor 30 mins
untilsoft.Meanwhile,in a largepan,
slowlyfrytheonionin theoilfor 10
minsuntilsoftandtranslucent.Add
thecreamandstock,bringtothe
boilandsimmerfor 10 mins.When
cooked,allowthegarlictocool
slightly.Squeezeoutthepulp and
whiskit intothesoup.
2 Removethecrustsfromthe
ciabatta,ripthebreadupintosmall
piecesandaddtothesoup.Add
thevinegar,thenallowthesoupto
simmerfor5 moremins.Blendin a
foodprocessoruntilsmooth.Addthe
almonds,reservingsome,andwhizz
again.Seasontotaste,garnishwith
almondsandpeashoots,andserve
withcharredsourdough,if using.
