Forthecake
10 strandsofsaffron,dropped
into4 tablespoonsofwarm milk
250gunsaltedbutter
250gcastersugar
5 mediumeggs,beaten
250gself-raisingflour
1 teaspoonbakingpowder
Forthemilkdrizzle
100gmilkpowder
150mlboilingwater
cardamomseeds,removed from
thepodsandground
Forthebuttercream
2 cardamompods,crushed
3 tablespoonswholemilk
300gunsaltedbutter,softened
600gicingsugar, sifted
Todecorate
ediblerosepetals,mixedwith
100g roughly chopped pistachios

1 Preheattheovento170°C/fan
150°C.Greaseand line two 20cm
sandwichtins.
2 Makethesaffronmilk*.Placethe
butterandsugarin a bowlandwhisk
untillightandfluffy.Addtheeggsa
littleata time,makingsuretokeep
whisking.Thenaddtheflour,baking
powderandsaffronmilk,andfoldthe
mixtureuntilyouhavea shinybatter.
3 Divide the mixture between the

twotinsandlevelthe tops. Bake for
20–25minutes.
4 Meanwhile,mixthemilkpowder
withtheboilingwaterin a bowl.Add
thecardamomseedsandmix.Assoon
asthecakesareoutoftheoven,
drizzlesomeofthemilkoverthetop
ofbothcakesandleavein thetinfor
atleast 10 minutesbeforeturningout
andremovingthemtocoolona rack.
5 Putthecardamompodsin a small
bowlofthemilkandleavetoinfuse.
6 Meanwhile,putthebutterintoa
mixingbowlandwhiskuntilverysoft.
Addtheicingsugara littleata time,
whiskingaftereachaddition,untilall
combined.Pourthecardamommilk
througha sieveintothebuttercream
andwhiskuntilreallylightandfluffy.
7 Oncethecakesaretotallycool,
placeonecakeonyourserving
dishandspreadanevenlayerof
buttercreamoverit. Puttheothercake
ontop.Flipthecakeoversothemilk
drizzletopbecomesthebottomand
sandwichesthebuttercream.Spread
somebuttercreamevenlyacrossthe
topandthesidesanduse a ruler to
levelofftheedges.
8 If youhaveanycreamleftoveryou
canpipekissesontop.Gentlytake
thepetalsandpistachiosandpress
into the bottom edge of the cake.
