wipedandsliced
300gdriedspaghetti
2 eggs,plus1 yolk
60gGranaPadanocheese,grated
2 ripetomatoes, deseeded and
chopped
a few parsley leaves, chopped
1 Heata largefryingpan,add
thechunksofsausageandcook
forabout5 mins,untilbrowned.
Removefromthepanandsetaside.
2 Pour off the fat from the frying
pan.Addthesmokedbaconbitsor
choppedstreakybacon,andfryfor
1 min.Addtheslicedonionand
cookfora further5 mins.
3 Addthegarlicandmushrooms,
coverthepanwiththelidandfry
gentlyfora fewmins.Thentake
offthelidandcookuntilthe juices
havebeenabsorbed.
4 Meanwhile,cookthespaghetti
in boilingsaltedwateraccording
toinstructionsonthepacket,until
justtender.Drain,leavinga small
amountofwaterinthepan,then
returnthepastatothepan.
5 Beattheeggswiththegrated
cheese,andseasonwellwithsalt
andfreshlygroundblackpepper.
Stirintothepastaquicklyto coat
thestrandsintheegg.
6 Addthesausages,baconand
mushroommixtureandthe
tomatoes,andgentlymixin.Serve
