crushed

5 wholecloves
1 cinnamonstick
300gbasmatirice,rinsed
500mlvegetablestock (gluten
free, if needed)

75mlcoconutmilk
pinchofsaffron
350gtigerprawns
1tbspgarammasala
125gfrozenpeas
coriander leaves, chopped

1 Heat1tbspoilin a panandcookthe
onionuntilgolden.Addthecoriander
andcuminseeds,clovesand
cinnamon,andcookfor2 mins.Add
thericeandstirthroughthespicesto
coatthegrainsandcookfor2 mins.
2 Add the stock, bring to the boil,

coverandreducetoa gentle
simmerfor 10 mins.Adda little
waterif thericebeginstostick.
3 Meanwhile,warmthecoconut
milkwiththesaffron.Ina separate
pan,tosstheprawnsin thegaram
masalaandfryintheremaining oil,
untilpinkandcharred.
4 Uncoverthericepan,stirthrough
thepeasandcookfor4 mins.Gently

prawns,corianderandcoconutmilk.
