1 egg,beaten
1 shallot,peeledandchopped
150gpeeledrawkingprawns
3 springonions, trimmed and
sliced
60gbeansprouts
60gmangetout,cutintostrips
30groasted salted peanuts,
crushed
2tbspchoppedfresh coriander
2 limes, sliced


1 Soakthericenoodlesinboiling
waterfor 15 mins,untiljustsoft.
Drain,rinseandsetaside.
2 Meanwhile,ina smallbowl,mix
thesugar,fishsauce,tamarind
paste,chilliesand2tspwater.
3 Heat½theoilina wok,addthe
egg,andletit scramble.Tipit out
ontoa plate.Heattherestofthe
oil,addtheshallotand prawns and
cookfor1-2mins.
4 Addthenoodles.Addthe
dressingandsimmerfora fewsecs
untilabsorbed.Addthespringonions,
beansproutsandmangetout,and
warmthrough.Addthescrambled
eggandsprinklein ½thepeanuts
and½thechoppedcoriander.
5 Servegarnishedwiththe
remainingnutsandcoriander,
withlimecheekstosqueezeover.
