Apple, sausage,


squash and cavolo


nero bake


This makes for a delicious dinner
the whole family will enjoy.

Serves 2 • Ready in 55 mins


4 sausages (gluten free)
2tbsp olive oil
1½tbsp wholegrain mustard
200g butternut squash, peeled
and cut into 2cm chunks
2 apples, cut into quarters (we
used Royal Gala)
1 red onion, cut into wedges
5 sage leaves
1tbsp runny honey
100g cavolo nero, shredded

1 Heat the oven to 200C/Gas 6. Toss
the sausages in 1tbsp of the oil and
½tbsp mustard. Cook in the oven for
15 mins, shaking halfway through.
2 Meanwhile, combine the squash,
apple, onion and sage with the
remaining oil, mustard and the honey.
Add to the tray. Place the sausages
on top so they develop a nice colour.
Cook for 20 mins.
3 Add the cavolo nero, giving it all a
good mix and placing the sausages
back on the top. Cook for 10 more
mins. Remove and serve immediately.
