Mushroom stroganoff

Serves 2 • 20 minutes

400gmixedmushrooms
1 redonion
2 clovesofgarlic
4 silverskinpickled onions
2 cornichons
4 sprigsoffresh flat-leaf parsley
oliveoil
1 tablespoonbaby capers
50mlwhisky
smokedpaprika
80g half-fat crème fraîche

1 Getalltheprepdonebeforeyou
startcooking:trimthemushrooms,
tearingupanylargeronesand
leavinganysmalleroneswhole,
peelandfinelyslicetheredonion
andgarlic,andfinelyslicethe
pickledonionsandcornichons.
Pickandroughlychoptheparsley
leaves,finelychoppingthestalks.
2 Place a large non-stick frying

panovera highheat,throwinthe
mushroomsandredonions,shake
intoonelater,thendry-fryfor 5
minutes(thiswillbringoutthenutty
flavour),stirringregularly.Drizzle
in 1 tablespoonofoil,thenaddthe
garlic,pickledonions,cornichons,
parsleystalksandcapers.After 3
minutes,pourin thewhisky,tiltthe
pantocarefullyflame,orlightwith
a longmatch(watchyoureyebrows!),
and,oncetheflamessubside,add
¼ ofa teaspoonofpaprika,the
crèmefraîcheandparsley,thentoss
together.Loosenwitha splashof
boilingwatertoa saucyconsistency,
andseasontotastewith sea salt
andblackpepper.
3 Dividebetweenplates,sprinkle
overa littlepaprika, and serve with
fluffyrice.
