Textured “ Woven” Patt ern


Frosting connoisseur Tessa Huff of Style Sweet CA adorns her cakes and cookies with incredible textured designs. All you need is
royal icing and a few diff erent piping tips to create this “woven” knit design on her Mitten Cookies (recipe on page 95).

STEP 1: Using an off set spatula, spread a thin coat of light
blue royal icing around mitten cookie, leaving about ⅛-inch
border un-iced. This prevents any cookie from showing
through the piped icing.

STEP 2: Place Lemon Royal Icing in a piping bag fi tted
with a small petal tip (Wilton No. 101) or a small round tip
(Wilton No. 5). Starting at edge of royal icing at one end
of the cookie, pipe the blue royal icing into a vertical line
of “V” shapes one after the other down the center of the
cookie until you reach the opposite top edge of the royal
icing. Point narrow end of petal tip away from your body and
toward top of cookie as you pipe down length of cookie.

STEP 3: Switching to the white
icing, turn cookie, and create a new row
of alternating woven pattern. Repeat,
alternating between the white and blue
icings, until piped icing covers fl ooded royal
icing completely. Let icing dry completely
and harden before carefully storing cookies.
