⅓ cup (104 grams) dulce de leche; reserve
remaining dulce de leche for another use.


Note: The cookies come together quickly, but take
note of the cook time for the dulce de leche in the
buttercream so you can plan accordingly. You can
also use store-bought dulce de leche in place of
this homemade version.


PRO TIP
When preparing the Dulce de Leche, you just want You just want
some bubbles around the edges of the pan. After 30 to 45 minutes,
the color will start to deepen and the mixture will begin to thicken a
bit. When this happens, it’ll be more prone to a heavy boil, which is
bad, so continue adjusting the temperature as needed and stirring
more frequently. This dulce de leche deepens and thickens faster
than usual because of the addition of cream, so keep an eye an it.
You want it to have a nice, thick consistency and a bronzed and deep
caramel appearance.
