Yes, You Do Want
to Be the Person Who
Makes Nut Butter

If there’s one kitchen staple
you should make instead of buy,
it’s...salad dressing. But if you’re
ready to DIY two food items, try
your hand at nut butter, which is
leaps and bounds more delicious
than the store-bought alternative
and infinitely tweakable. Making
a batch is as simple as hauling
out your food processor.

Nuts Here, Nuts There, Nuts Everywhere

When a dish is missing something, 90 percent of the time
it’s acid or salt. For that other 10 percent, it’s nuts.*
Whether you’re tweaking a dip or fixing a salad, they’ll
give you the added fattiness and texture you’re after.
*NOT SCIENTIFICALLY PROVEN DATA

Basically

Dressing
Why scatter nuts
on top of a salad
when you could
mix toasted finely
chopped nuts right
into the vinaigrette
to coat every leaf?

Smoothies
and Shakes
Tossing cashews into
the blender provides
rich silkiness without
the dose of dairy.

Fruit Salads
Toasted salted nuts
are amazing
sprinkled over thinly
sliced fruit for that
magical balance
of salty, sweet,
crunchy, and juicy.

Dips
Shower chopped
butter-toasted nuts
over hummus, white
bean dip, whipped
ricotta, and more.

Crisps and
Crumbles
Add a handful of
coarsely chopped
pecans into the
topping for extra
texture on your
fall fruit desserts.

Pasta
A logical addition to
room-temp pasta
salads, nuts can also
be the base of a
sauce: Try browning

chopped walnuts in
sage butter and
spooning that over
warm tortellini.

Green Sauce
Any green sauce
you’re throwing
together will gain
richness and body
from 1/4 cup of nuts.
Try cilantro with
peanuts, parsley
with almonds, or
mint with hazelnuts.

FOOD STYLING BY KAT BOYTSOVA

1

Start with 2 cups of fully
cooled toasted nuts—any type!
Throw them into a food processor
and grind until finely chopped.

2

Scrape down the sides of the
bowl, then continue to process
until the mixture is as creamy
or chunky as you’d like it.

3

If you’re aiming for a silky-
smooth spread, add a splash of
neutral oil, which will help
achieve that texture. Season with
salt and sweeteners or spices of
your choice, such as honey, cocoa
powder, cinnamon, or cayenne.

4

Store in the fridge for three
weeks, during which you’ll make
the best NB&Js of your life.
