Banana &
chocolate cake
SERVES 8
180g (6oz) butter, softened
190g (6½oz) caster sugar
3 free-range eggs
3 ripe bananas, peeled, mashed
1½ tsp bicarbonate of soda,
dissolved in 3 tsp hot milk
340g (12oz) plain flour
1½ tsp baking powder
200g (7oz) dark or milk chocolate,
chopped, plus extra to decorate
250ml (9fl oz) whipping cream

1 Preheat the oven to 180ºC/Gas
Mark 4. Grease a 25cm (10in)
springform cake tin.
2 Put the butter and sugar in a
mixing bowl and beat with a
wooden spoon or electric whisk until
all the sugar has been incorporated
and the mixture is pale.
3 Add the eggs, one at a time,
mixing well between each addition
to make sure it’s well incorporated.
Add the mashed bananas, then the
dissolved bicarb mixture. Mix well.
Add the flour and baking powder,
folding it all in with a spoon until
you have a homogeneous mixture.
Fold in the chocolate.
4 Spoon the mixture into the
prepared cake tin and bake for
40 minutes, or until a skewer
inserted in the middle comes out
clean. Allow the cake to cool in
the tin.
5 Just before you are ready to serve,
beat the cream to soft peaks and
spread over the top of the cooled
cake. Decorate with grated and
shaved chocolate.

treacle fruit cake


SERVES 8-10
200g (7oz) vegan butter (margarine)
200g (7oz) demerara brown sugar
2 flax eggs
2 tbsp treacle
2 tsp mixed spice
1 tsp ground cinnamon
1 tsp ground ginger
grated zest of 1 lemon
grated zest of 1 orange
200g (7oz) self-raising flour
300g (10½oz) raisins
2 South African apples, coarsely
grated (with the peel on)


1 Make the flax eggs and pop them in
the fridge to thicken (see notes below).
2 Preheat the oven to 180°C/Gas
Mark 4.
3 Line a 24 cm (9½in) loose - bot tomed
cake tin with non-stick baking paper or a
cake liner.
4 Cream the vegan butter and sugar


until soft. Add the treacle, flax eggs,
spices and citrus peel, then whisk until
well combined.
5 Add the flour and baking powder and
fold in gently. Add the raisins and grated
apple and once again fold in gently.
6 Pour the batter into the prepared cake
tin and bake in the oven for 1 hour-1
hour and 10 minutes. Check about
40 minutes in; if it's browning too much,
cover with foil and pop back in.
7 Check with a skewer to see if it is
ready. W hen inser ted in the centre of
the cake it should come out clean.
8 Leave in the tin to cool for 10 minutes,
then release from the tin carefully
and move to a baking rack to
cool completely.

How to make flax eggs
For 2 flax eggs, whizz 2 tbsp flax seeds
(linseeds) into a powder. Pour into a
bowl with 6 tbsp water and stir well.
Pop in the fridge for 20-30 minutes to
thicken and use in place of eggs.
