Passion fruit
tiramisu

MAKES 4
8 ladyfi nger sponges
3 tbsp Kahlúa liqueur
1 tbsp instant coffee granules
4 passion fruit
500g (1lb 1oz) mascarpone
100g (3½oz) passion fruit yoghurt
75ml (2½fl oz) condensed milk

1 Break up the ladyfingers and divide
them evenly among four wine glasses.
In a small bowl, mix together the
Kahlúa, instant coffee, 3 tbsp water and
the pulp of 3 of the passion fruit. Divide
this mixture among the wine glasses,
pressing down the sponges to soak
them well.
2 For the cream, put the mascarpone,
yoghurt and condensed milk into a
mixing bowl and whisk until smooth.
Divide the cream among the wine
glasses, carefully spooning it on top of
the soaked sponges. Refrigerate for
20 minutes.
3 Just before serving, top with the pulp
from the remaining passion fruit.

MAKES 12-16 PIECES

1 tbsp golden syrup

250g (9oz) dark chocolate
(60-70% cocoa solids), broken
into chunks
100g (3½oz) milk chocolate, broken
into chunks
125g (4½oz) salted butter
50g (1¾oz) mini marshmallows
100g (3½oz) caramel/toffee wafers
(stroopwafel), roughly chopped
100g (3½oz) hazelnuts, roughly
chopped
100g (3½oz) salted pretzels,
roughly crushed
100g (3½oz) dried apple, roughly
chopped

1 Line a 20 cm (8in) square cake tin with
baking paper. Put both the chocolates,
butter and the golden syrup into a
medium saucepan and set over a
medium-low heat. Stirring frequently,
allow everything to melt together into a
smooth, chocolatey pool.
2 Put all the remaining ingredients into
a large mixing bowl.
3 Pour the chocolate mixture into the
mixing bowl and stir so that everything
is evenly mixed and coated in the
chocolate. Scoop into the prepared cake
tin, press down to level and refrigerate
for an hour or until set solid. Cut into the
desired number and sized pieces.
