Pan-Fried Chicken with Black Pepper Sauce

900g chicken legs,
boned
Pinch salt
Pinch sugar
Olive oil
180g green salad
Sauce Step 1

Beans, chopped
10g onion, chopped
10g butter
6g black pepper,
crushed
3g white pepper,
crushed
5g salt
5g Pearl River Bridge
Gold Label Chicken
Powder
½ tbsp Pearl River
Bridge Superior Light
Soy Sauce
5g Pearl River Bridge
Premium Oyster
Flavoured Sauce
½ tbsp Pearl River
Bridge Superior Dark
Soy Sauce
50g honey
250mL water
Sauce Step 2
4g black pepper,
crushed
7g cornstarch, mixed
with 3½ mL water
In bowl, place chicken, salt, sugar and olive oil. Mix
evenly and marinade for 15 mins.
In saucepan, sauté preserved beans and onion
with butter over high heat, then add all other Sauce
Step 1 ingredients and boil until ⅔ liquid is left.
Sieve sauce into same saucepan, stir in Sauce
Step 2 ingredients and heat for another minute,
then remove saucepan from heat.
In frying pan, heat olive oil, add chicken, skin
facing down, sauté 3 mins each side until golden,
then transfer to dishes.
Decorate dish with green salad of choice and
pour over sauce to serve.
Roasted Eggplant with Minced Meat

1 eggplant
4 tbsp olive oil
3 cloves garlic, minced
50g minced pork or beef
1 red chilli, sliced
2 chives, chopped
Pinch white sesame seeds
Sauce
2 tsp Pearl River Bridge Superior
Light Soy Sauce
15g Pearl River Bridge Premium
Oyster Flavoured Sauce
½ tsp salt
1 tsp sugar
Preheat oven to 200ºC, wash eggplant and slice in half lengthwise.
Slash eggplant flesh in a diamond criss-cross pattern and brush each half
with about 2 tbsp olive oil.
Place eggplant cut side up in roasting dish or oven tray and roast for 10-15
min until tender.
In small bowl, add all sauce ingredients and mix well.
In frying pan, preheat 2 tbsp olive oil over medium heat, add minced garlic
and fry until fragrant. Add minced pork or beef and sauté for a further 2 mins.
Add sauce mixture and toss to coat. Finally, add red chilli slices and cook for
1 min before removing from heat.
On each half of roasted eggplant, place meat evenly, then roast for another
5 mins.
Remove from oven, garnish with chopped chives and pinch of white
sesame seeds and serve hot.
