Raspberry Chia Pudding
Recipe / Cabot Health
Serves: 1

2 tbsp chia seeds
1 tbsp ground flaxseed
¼–½ tsp Nature Sweet Sugar
Substitute

½ cup coconut milk
½ cup fresh or frozen
raspberries

Mix all ingredients except raspberries together.
Pour into small jar or bowl, either layering or topping with
raspberries. Allow to set for at least 2 hours in fridge.
Optional: If you prefer, you can mix the raspberries through the
whole mixture in step 1.

Makes: 12

½ cup quinoa flakes
½ cup rolled oats
½ cup almond meal
¼ cup ground linseed
¼ cup p epitas, chopped
2 tbsp sesame seeds
3 tbsp chopped raisins or
cranberries

2 tbsp Nature Sweet Sugar
Substitute
1 tsp ground cinnamon
½ tsp ground nutmeg
1 tsp ground turmeric
(optional)
2 eggs
⅓ cup coconut oil, melted

Preheat oven to 160°C and line baking tray
Mix all dry ingredients together in bowl.
In separate bowl, whisk together eggs and coconut oil. Add
to dry ingredients and mix until well combined. If mixture is too
dry, add dash of water.
Allow mixture to rest for 15 mins or so.
Spoon 1-2 tbsp of mixture at a time onto baking tray, leaving
space in between and bake for 10-15 mins or until golden brown.
Store in an air-tight container.
