Crumbles are believed to have begun as an economical alternative to pies during wartime when pastry was in short
supply. A crumble can either be sweet or savoury, although sweet varieties are usually favoured. They usually contain
stewed fruits and a basic crumble topping can be made from a combination of fl our, oats, butter and sweetener.
Crumbles are baked until the topping is crisp and changes in the topping make for a totally diff erent experience,
although the result is usually always delicious. The great thing about crumbles is that their variety is only limited
by your imagination. Try our delicious versions including: Peanut Butter & Apple Flan; Banana, Caramel & Miso
Crumble; Blackberry & Apple Crumble; Strawberry, Apple & Rhubarb Crumble Cake; Pear & Berry Granola Crumble;
Apple, Raspberry, Rhubarb & Macadamia Crumbe; and Rhubarb & Apple Deconstructed Crumble.

Banana, Caramel & Miso Crumble

A delicious combination of caramel and banana with
a hit of salty, umami miso — what’s not to love?
Serves: 4–6

4–5 ripe bananas, peeled
& roughly chopped

Crumble
1 cup rolled oats
¼ cup chopped walnuts
or pecans
¼ cup butter, cold from
fridge & cubed
Pinch salt

¼ tsp nutmeg, freshly
grated if possible

Caramel Sauce
¼ cup coconut milk
1 tbsp nut butter
(any kind)
1 tbsp miso paste
¼ cup maple syrup

Preheat oven to 180°C.
Combine crumble ingredients in bowl and rub together
with fingers to distribute butter through oats and nuts.
Whisk together caramel sauce ingredients in small
saucepan and cook over low–medium heat for few mins
until slightly thickened.
Place bananas into ovenproof dish and pour over
caramel sauce.
Sprinkle over crumble mixture and bake for 25–30
mins, or until gooey.
Serve with natural yoghurt, coconut yoghurt or vanilla
ice cream, as desired.

Rhubarb & Apple
Deconstructed Crumble

Each component of this is delicious in its own right, but combined they make
a force to be reckoned with. Plus, it makes a lovely protein and fibre-rich dessert.
If you’re lucky you might have some compote or crumble left to dress your
morning porridge with — yum!
Serves: 3–4

1 cup natural yoghurt
1 tsp maple syrup
½ tsp vanilla

Toppin g s
Cacao nibs
Rose petals
Mint
Coconut

Compote
3–4 stalks rhubarb,
leaves discarded
1 apple, cored
& diced
Rose water
3–4 cardamom pods
1 tbsp maple syrup
2 tbsp water

Crumble
40g pecans, roughly
chopped
40g almond meal
10g pepitas
20g pistachios
10g butter, cold from
fridge and cubed
1 tbsp sesame seeds

Combine yoghurt, maple syrup and
vanilla and place mixture into fridge
until needed.
Preheat oven to 180°C.
Slice rhubarb stalks into 5cm
pieces, and place in small saucepan
with the rest of compote ingredients.
Cook on low–medium heat until
fruit is softened and comes together
in pink blend.

Meanwhile, combine crumble
ingredients and rub together between
fingers to coat nuts and seeds in
butter. Mix well.
Place on lined baking tray and bake
for 10–12 mins.
Layer yoghurt mix, compote and
crumble in bowl or glass, and top with
desired toppings.
Enjoy immediately.
