Pear Crumble Cake
Recipe / Meg Thompson
A not-too-sweet cake with the added benefit of oat bran
to lend a chewy texture and some extra fibre. Based on
a similar Jude Blereau recipe, this is a lovely afternoon-
tea crumble cake that can just as easily be made with
apples instead of pears, if you prefer.
Serves: 10-12

3 large pears
1 tbsp butter
1 tsp maple syrup

Dry ingredients
1 cup oatmeal
1 cup spelt flour
½ cup rapadura sugar
2 tsp baking powder
½ tsp ground cinnamon
½ tsp nutmeg, freshly
grated if possible

Wet ingredients
100g melted & cooled
butter
1 free-range egg, beaten
1 tsp vanilla
½ cup natural yoghurt

Crumble
¼ cup almonds, roughly
chopped
¼ cup coconut flakes

Preheat oven to 180°C.
Peel and cut pears into quarters. Remove core and
then cut each quarter into three pieces.
Heat butter in frying pan and add pears, cooking over
low to medium heat for 15–20 mins, or until pears are
tender and have begun to caramelise.
Combine dry ingredients in a bowl.
Combine wet ingredients and add to dry mixture,
stirring until just combined.
Pour into 20cm lined or greased cake tin.
Layer pears on top, pushing gently into mixture.
Bake for 45 mins, or until skewer inserted comes
out clean.
Around 10 mins before end of cooking, remove
cake from oven, sprinkle over crumble mix and
return to oven.
Let cake cool, then serve.

Pear & Berry Granola Crumble

If I want a quick, warming dessert, my go-to is always stewed fruits, as they only
take a few minutes to cook. I turn them into a fast crumble by topping them with
my no-oil granola that I always have in a large jar in the pantry.
Serves: 4

Granola Crumble
800g raw muesli
3 cups apple purée
1 tsp vanilla
1 tsp ground cinnamon
2 tbsp maple syrup

Filling
250g frozen mixed berries
4 pears, cored & sliced
1 tbsp orange zest
8 medjool dates, pitted & chopped

Preheat oven to 180°C. Line 2 baking
trays with greaseproof paper.
Place all crumble ingredients
in large bo wl and mix well. Spread
mixture evenly over both trays. Place
trays in oven and cook for 10–15 mins.
Remove from oven. Give mixture on
each tray a good stir, then return to
oven and cook for further 10–15 mins
until golden to dark brown.

Remove from oven and set aside
to cool. Once cool, place granola in
airtight jar.
For filling, place all ingredients
into saucepan over low heat, cover
with lid and cook until pears and
berries are soft.
Place filling mixture in bowl and
top with some granola crumble.
Enjoy immediately.
