Blackberry & Apple Crumble Muffi ns

These tasty muffins are jam-packed with protective
antioxidants and dietary fibre that help neutralise free
radicals in the body and support cardiovascular health.
Apples contain so luble fibre that helps lower cholesterol
levels, and polyphenols that can lower high blood pressure
and reduce the risk of stroke.
Makes: 12 muffins

1½ cups oat flour
1 cup almond meal
1 tsp baking powder
½ tsp bicarbonate of soda
½ tsp ground cinnamon
⅓ cup coconut oil, melted
⅓ cup raw honey
2 organic eggs
1 tsp vanilla-bean extract
¾ cup diced & peeled
apples
¾ cup sliced blackberries

Topping
⅓ cup almond meal
2 tbsp coconut sugar
2 tbsp almond flakes
2 tbsp whole oats
3 tbsp coconut oil, softened
½ tsp ground cinnamon
1 tbsp raw honey

Preheat oven to 180°C and
grease 12-cup muffin pan or
line with paper cases.
In medium-sized bowl
mix oat flour, almond meal,
baking powder, bicarb and
cinnamon.
In another bowl, whisk
together coconut oil, honey,
eggs and vanilla.
Pour wet ingredients into
dry and combine.

Gently mix through
diced apple and blackberry
slices. Spoon mixture into
muffin tray.
Combine topping
ingredients in small bowl.
Add extra honey if mixture
is too dry.
Top muffin mixture with
topping and bake for 30
mins, until skewer comes
out cleanly.

Strawberry, Apple & Rhubarb Crumble Cake

This delicious crumble cake makes a perfect afternoon-tea treat or dessert
served warm with homemade custard. R hubarb is a great source of dietary
fibre and has a natural laxative effect, so it is beneficial for digestive health and
to improve bowel regularity and bloating. Rhubarb also contains calcium and
vitamin K, which are both important for bone health.
Serves: 6

Filling
1½ cups halved strawberries
1½ cup rhubarb, trimmed & cut
into 2cm pieces
2 tbsp water
2 tbsp raw honey
½ tsp ground ginger

Cake
2½ cups almond meal
¼ cup coconut flour
2 tsp baking powder

2 organic eggs
¼ cup raw honey
¼ cup cold-pressed olive oil
2 tsp vanilla extract or paste
1½ cup grated apples (around
2 apples)

Topping
½ cup almond flakes
¼ cup almond meal
3 tbsp cold-pressed olive oil
2 tbsp coconut sugar

Preheat oven to 180°C. Line 15cm
round cake tin with baking paper.
Cook filling ingredients in small
saucepan, covered, for 4–5 mins, until
tender. Set aside to cool.
Place all cake ingredients in
food processor and blend until
well combined.
Pour cake mixture into cake tin.
Strain strawberry and rhubarb filling
mix and spread over cake.
Combine all topping ingredients in
medium bowl and mix together with
hands to reach crumble consistency.
Cover rhubarb and strawberry mix
with topping.
Bake for 45 mins. Allow to cool in tin
before removing.
Delicious on its own or served warm
with homemade custard, coconut
yoghurt or fresh cream.

Berry & Pear Breakfast Crumble

This delicious dish makes a great dessert or breakfast. Pears are an excellent
source of dietary fibre, which is an important part of our diet to keep us regular
and to reduce the risk of bowel cancer. Cinnamon is a lovely warming spice that
possesses many wonderful health benefits such as improving circulation and
helping to balance blood sugar levels, which can reduce the risk of diabetes.
Serves: 4

1 cup oats
¼ cup coconut flakes
2 tbsp of sunflower seeds,
pepitas or almond flakes
¼ cup hazelnuts or walnuts
2 tbsp coconut oil
2 tbsp raw honey

1 tsp cinnamon
1 tsp vanilla-bean extract or paste
1 cup sliced strawberries
½ cup halved blackberries or
blueberries
2 large, ripe pears, peeled & sliced
Yoghurt (natural, Greek or coconut)

Preheat oven to 180°C.
Place oats, coconut, seeds, nuts,
coconut oil, honey, cinnamon and
vanilla in food processor and pulse
3–4 times to make cumble.

In baking dish, layer strawberries,
berries and pears and sprinkle
crumble over.
Bake for 30 mins until golden.
Serve with yoghurt.
