Mixed-Mushroom Pilaf

Cooking a good pilaf is all about steaming the rice so
that it absorbs all the liquid and flavours. All you have to
do to make the perfect pilaf is put the lid on, then leave it
alone — no peeking.
Serves: 4
Pilaf
1 onion, finely diced
2 cloves garlic, finely
chopped
500g mixed mushrooms
(oyster, button, brown,
enoki), cut into bite-sized
pieces
1 stalk celery, diced
2 sprigs thyme
4 cups liquid vegetable stock
2 cups uncooked brown
basmati rice
1 sprig rosemary, leaves
only, finely chopped
1 bunch parsley, roughly
chopped
Salt & pepper, to taste
Salad
1 cucumber, diced
Juice 1 lemon
4 cups mixed salad leaves
1 bunch mint, roughly
chopped
½ cup pine nuts
½ cup sundried tomatoes,
drained o f any oil & sliced
Place all pilaf ingredients except parsley and salt and pepper
into rice cooker and cook until all stock has been absorbed.
Meanwhile, prepare salad by placing all ingredients into
bowl and tossing with a little salt and pepper to taste.
Add parsley to pilaf with salt and pepper to taste. Serve
with salad.
Pumpkin & Caulifl ower Pilaf

This pilaf is all about balance — fluffy brown rice, crunchy
pistachios, tangy lemon and sweet dates.
Serves: 4
1 onion, finely diced
1 stick cinnamon
4 cloves
6 black peppercorns
1 whole star anise
8 cardamom pods, crushed
2 bay leaves
2 cups uncooked brown
basmati rice
¼ medium pumpkin, cut into bite-
sized cubes
¼ cauliflower, broken into florets
1 lemon, zested and juiced
4 cups liquid vegetable stock
1 pinch saffron threads
4 fresh medjool dates, pitted and
finely chopped
¼ cup pistachio nuts, shelled
& roughly chopped
4 cups shredded baby
spinach leaves
Salt & pepper, to taste
Preheat oven to 180°C.
Heat deep pan over high heat, add
diced onion and sauté for 2 mins.
Add ¼ cup water to deglaze pan.
Add spices and continue to stir.
Add uncooked brown basmati
rice and stir well to coat grains.
Add pumpkin cubes, cauliflower
florets, lemon zest and stock and
stir well.
Add saffron threads, cover with
lid and place pan in oven for
25 mins.
Remove from oven, take off
lid and add chopped dates and
pistachio nuts.
Gently stir through shredded
spinach. Add salt and pepper
to taste.
Finish with lemon juice
squeezed over the top.
Serve immediately.
