Mandarin, Mint & Pistachio Ricotta
Recipe / Gold Nugget
You can actually serve up this dish in less than five minutes
using fresh ricotta, but for a lazy weekend breakfast with a
lovely warm ricotta smell wafting through the house, dress the
ricotta, bake and serve warm with your mandarins. This dish
offers a nice mix of savoury and sweet.
Serves: 6
2 tsp chilli powder
4 tsp fresh thyme
Salt & pepper
1 × 1kg tub ricotta
2 Gold Nugget mandarins,
segmented
4 tbsp chopped pistachios
Bunch mint
Preheat oven to 150°C.
Mix chilli, thyme, salt and
black pepper.
Place ricotta on greased
baking tray and sprinkle with
chilli mix.
Bake for 1 hour until golden.
Mix in mandarins segments
and pistachios.
Dress ricotta with mixture
10 mins before serving and
serve with sprigs of mint.
Mandarin Duck Salad
Recipe / Gold Nugget
Duck is such a good protein, but is often served with
heavy Asian sweet sauces. This recipe draws its
sweetness from natural mandarins.
Serves: 4
200g sugar snap peas
2 duck breasts
2 Gold Nugget mandarins
1 red lettuce, leaves
½ punnet blueberries
½ cup slivered almonds
Dressing
2 cloves garlic, crushed
1 tbsp Dijon mustard
2 tbsp Gold Nugget
mandarin juice
2 tbsp extra-virgin olive oil
Preheat oven to 180°C.
Steam or microwave peas
until just tender and drain.
Rinse under cold water, drain
again then set aside.
Score fatty side of duck
breast. Cook fat-side down
in ovenproof frying pan for 4
mins, then turn and cook for
further 2 mins. Transfer to
oven and bake for 6 mins.
Slice breast with serrated
knife. Place in large bowl with
peas, mandarin, lettuce leaves,
blueberries and almonds.
Combine dressing
ingredients in jar and shake
until combined.
Pour dressing over salad
and toss gently. Serve.

& Coriander-Crusted Scallops

Hearty, healthy, flavoursome salads are the saviour of many a good
dietary intent. This healthy salad combines tangy, sweet, fresh mandarin
with coriander to complement the mellow sweetness of scallops.
Serves: 4
Mandarin Vinaigrette
3 tbsp Gold Nugget mandarin juice
2 tbsp extra-virgin olive oil
Lemon zest, to taste
4 tsp white-wine vinegar
1 tbsp shallots, minced or very
thinly sliced
Chopped fresh herbs
1 tsp Dijon mustard
Pinch salt & pepper
Salad
5 cups torn endive leaves
5 cups baby spinach
2 Gold Nugget mandarins,
segmented
2 tsp coriander seeds
Good pinch salt & pepper
500g scallops, patted dry
1 tbsp extra-virgin olive oil
To make vinaigrette, release
juice from mandarin by rolling it
under palm of hand, then peel and
squeeze. Whisk all ingredients in
medium-sized bowl and set aside.
Combine salad leaves and
mandarin segments.
Pound coriander seeds in mortar
and pestle with salt and pepper, and
sprinkle over scallops.
Heat extra-virgin olive oil in large
frying pan over medium heat. Add
scallops and cook until they form
golden crust and are just opaque
(2 mins each side).
Serve scallops on salad.
Add vinaigrette and toss.
Enjoy immediately.
