As in neighbouring Greece, Cypriot cooks make the most of locally available fresh ingredients: grains and
pulses, fresh fruit, vegetables, herbs, lean meat, seafood and olive oil. In addition, Cyprus’s geographical
position and history have opened it up to other infl uences beyond Greece with the Middle East, Britain,
France, Italy and Turkey all having an impact on the local cuisine. The result is hearty, fresh dishes that are
well-seasoned and spicy. Bring some nourishing Cypriot style to your cooking with: Crispy Haloumi Chips
with Lemon, Rosemary & Honey; Pastitsio (with a yoghurt and tahini blend replacing the cheesy sauce);
Vegetarian Cypriot Sausages; Baked Stuff ed Tomatoes; Feta & Silver Beet Parcels; Honey & Thyme Haloumi

Baked Stuff ed Tomatoes

Tomatoes are rich in the carotenoid lycopene, vitamin C and beta-
carotene, which are all wonderful antioxidant and anti-inflammatory
nutrients. Consuming tomatoes with olive oil will help increase the
absorption of lycopene.
Serves: 3

1 tbsp cold-pressed olive oil
3 large ripe tomatoes
½ cup uncooked brown rice
or quinoa
⅓ cup cooked corn kernels
1 clove garlic, minced
Pinch sea salt & pepper
3 green onions, finely chopped

Small handful chopped fresh
parsley
½ lemon, juice & zest
Small handful coriander leaves,
roughly chopped
¼ cup crumbled feta or
Parmesan
Fresh herbs, to garnish

Preheat oven to 180°C.
Drizzle olive oil into medium-
sized baking dish.
Cut tops off tomatoes, scoop
out seeds and pulp and reserve.
Cook rice or quinoa.
In small saucepan with olive
oil over medium heat, combine
cooked rice, corn kernels, garlic,
salt and pepper, green onions,

parsley, lemon juice and zest and
coriander leaves.
Add ¼ cup of tomato seeds and
pulp, then combine.
Toss through feta or Parmesan
and spoon mixture into tomatoes.
Place tomato tops back on and
place in oven for 25 mins.
To serve, drizzle with olive oil
and sprinkle with fresh herbs.

Cypriot-style Salmon Skewers

Salmon is rich in omega-3 essential fatty acids, which are vital for
cardiovascular health and brain function. Salmon also contains
astaxanthin, a super-carotenoid that gives salmon its pink colour.
This antioxidant helps protect against premature ageing and
chronic diseases such as cancer and neuro degenerative diseases.
Serves: 6–8

1 tsp dried oregano
½ tsp sweet paprika
1 tsp ground coriander
1 tbsp cold-pressed olive oil
1 clove garlic, minced
2 fillets wild salmon, cut
in pieces

4 bamboo or metal skewers
1 lemon, sliced thinly
1 capsicum, diced thickly
Juice ½ lemon
Pinch sea salt & pepper,
to taste

In small bowl, mix together
oregano, sweet paprika
and coriander.
Mix olive oil and garlic
together in another small
bowl. Set aside.
Thread salmon pieces onto
skewers with folded lemon
slices and capsicum between
each piece.

Brush with olive oil and
garlic mix, and season with
mixed spices.
Grill or barbecue skewers
for 6–8 mins each side. Drizzle
with fresh lemon juice and
sprinkle with salt and pepper.
Tip: If you’re using bamboo
skewers, make sure you soak
them in water first.
