Including fermented foods such as yoghurt in your diet is an excellent
way to support gut health, which helps promote good digestion, mood
and immune function. Greek yoghurt is rich in protein and provides
your body with the amino acids it needs to build and repair muscles,
maintain healthy hair, skin and nails, and heal wounds. Yoghurt is
also a good source of vitamin B12, which plays a vital role in healthy
nervous system and brain function.
Serves: 43 tbsp water
1½ tsp powdered grass-fed
gelatine
1½ cups full-fat Greek yoghurt
1½ cups coconut cream
3 tbsp raw honey or 100 per
cent maple syrup1 tsp vanilla bean extract
or pasteStrawberry Compote
1 heaped cup sliced
strawberries
½ tsp rose water
2 tsp raw honeyPour water into small bowl , sprinkle with gelatine and allow to sit.
In medium bowl, mix yoghurt and ¾ cup coconut cream and
mix well.
In small saucepan over medium heat, combine remaining
coconut cream, honey or maple syrup and vanilla. Bring to
simmer for 2 mins. Remove from heat and stir in gelatine.
Pour mixture into yoghurt mix and combine.
Pour mixture into 4 glasses and put in fridge to set.
In small saucepan, heat strawberries, rose water and honey
for 3 mins.
Top panna cotta with compote and serve.
Cypriot Lemon Almond Cakes

A scrumptious, zesty and nourishing take on a traditional Cypriot semolina
cake. I’ve swapped semolina and sugar for almond meal and maple syrup
in this recipe, which tastes just as good (if not better) as the original while
making it c hock-a-block full with skin- and heart-loving healthy fats.
Makes: 8 mini cakes4 free-range eggs
2 tsp lemon zest
⅓ cup maple syrup
1½ cups almond meal2 tbsp coconut flour
1 tsp baking powder
Sea saltPreheat oven to 175°C and grease
8-cup muffin tray.
Whisk eggs, lemon zest and
maple syrup in bowl until creamy.
Add almond meal, coconut flour,
baking powder and pinch of sea salt.Mix well.
Pour into muffin tin and place in
middle of oven to bake for 20 mins.
Cool in tin for 15 mins.
Serve with coconut or Greek
