Feta & Silver Beet Parcels

These are a yummy, user-friendly snack on their own, or
make a fun accompaniment to a soup or larger spread.
Feel free to mix up the shapes — little cigar-shaped rolls
are a great idea, too. They only use a very small layering of
pastry, making the most of the delicious filling.
Serves: 8
½ bunch silver beet
2 tbsp olive oil, plus
extra for brushing
4 cloves garlic, peeled
& chopped
1 brown onion
200g feta, crumbled
Black pepper, to taste
8 sheets filo pastry
Sesame seeds (optional)
Preheat oven to 180°C.
Slice stems from silver beet, roughly chop leaves and
set aside.
Slice stems into small pieces as for celery, and add
to saucepan with oil, cooking over medium heat for
few mins.
Add garlic and onion and cook until onion is soft.
Add silver beet leaves and cook for few mins more
until wilted.
Stir through feta and pepper to taste, adding extra
pepper or salt, if needed.
Lay out one sheet of pastry, lightly brush with olive oil
and lay another sheet on top. Cut in half to make
2 squares.
Spoon some mixture onto 1 side of 1 square and fold
over other side, sticking down edges by rubbing some
water or oil between layers where pastry meets.
Continue until all mixture is used up.
Place on baking tray and brush tops with olive oil.
Sprinkle with sesame seeds, if desired.
Bake for about 20 mins, or until pastry is golden.
Chicken Souvlaki Bowl

This is a delicious combination of Greek, Turkish and Cypriot flavours.
It’s quick and easy to make and a favourite family meal.
Serves: 4
Skewers
600g chicken thigh fillet, diced
2 large red capsicums, diced
Marinade
1 tsp dried oregano
2 cloves garlic, minced
½ lemon, juice & zest
1 tbsp extra-virgin olive oil
½ tsp sea salt
Black pepper
Salad
1 cos lettuce, shredded
1 small red onion
2 tomatoes, sliced
1 cucumber, sliced
Handful parsley leaves, chopped
2 tbsp olive oil, to serve
1 lemon, cut into wedges
Yoghurt Dressing
½ cup full-fat natural yoghurt
1 clove garlic, minced
½ tsp sea salt
1 tbsp tahini
Dice chicken and capsicums and
thread onto skewers. If using
wooden skewers, wet first to prevent
skewers from burning. Place into
rectangular dish or onto plate.
Mix marinade ingredients
together. Drizzle marinade over each
skewer and set aside overnight or
while preparing salad.
For salad, shred lettuce and divide
between four bowls. Add sliced red
onion, tomato, cucumber and parsley.
To make yoghurt dressing, mix all
ingredients together in small bowl.
To cook chicken, heat barbecue
grill or cast-iron frying pan over
medium heat. Cook skewers, turning
to char on all sides until chicken is
cooked through.
Drizzle olive oil over salad. Top with
1 skewer and serve with wedge of
lemon and yoghurt dressing.
Serve as is or with charred pita
wraps. Enjoy!
