Hommus Spring Pizza
Recipe / Yumi
Serves: 4

2 tbsp extra-virgin olive oil
Zest ½ lemon
1 tbsp finely chopped dill
Sea salt & black pepper
2 gluten-free pizza bases
1 packet Yumi’s Sweet Potato
& Herb Veggie Bites

200g tub Yumi’s Traditional Middle
Eastern Hommus Dip
1 Lebanese cucumber, thinly
shaved
Fresh herbs
Goat’s cheese, to serve
Pomegranate seeds, to serve

Preheat oven to 200ºC (180ºC fan-forced).
Whisk together olive oil, lemon zest and dill. Season with salt and
pepper then brush generously over the pizza bases and bake 10–15
mins until golden and crispy. Remove from oven and allow to cool.
Prepare Yumi’s Sweet Potato and Herb Veggie Bites according to
packet instructions.
Divide Yumi’s Traditional Middle Eastern Hommus between the two
bases and spread to coat. Divide prepared Veggie Bites between pizzas
and top with cucumber slices, torn herbs, crumbled goat’s cheese and
pomegranate seeds. Season and serve.

Zucchini Falafel Slice
Recipe / Yumi
Serves: 8

375g zucchini, grated
1 large onion, finely chopped
½ cup savoury yeast flakes
1 cup shaved Parmesan
1 cup wholemeal self-
raising fl our
½ cup extra-virgin olive oil

5 eggs
Sea salt & freshly cracked
black pepper
1 packet Yumi’s Falafel
Yumi’s Roasted Beetroot Dip &
watercress sprigs, to serve

Preheat oven to 180ºC (160ºC fan-forced). Line 23×30cm
rectangular baking tin with baking paper.
In large bowl, combine zucchini, onion, savoury yeast flakes,
Parmesan, flour, oil and eggs. Season and mix well.
Pour mixture into prepared tin and smooth surface. Press
Yumi’s Falafel into surface of slice randomly and bake 30–35
mins until fluffy and golden. Remove from oven and allow to
cool to room temperature before slicing and serving. Top with
Yumi’s Roasted Beetroot Dip and watercress sprigs.
