2 tsp cinnamon

1 cup pumpkin purée
⅓ cup olive oil
1 cup buttermilk
1 cup grated peeled carrots
1 cup grated peeled red apples

½ cup unsalted butter, softened
1 cup brown sugar
2 tsp vanilla

2 cups icing sugar (approx)

¼ cup pumpkin seeds
¼ cup sliced almonds
¼ cup chopped pecans
2 tbsp brown sugar
¼ tsp salt
¼ cup maple syrup

Cake Preheat oven to 350°F. Line rimmed
18- x 13-inch baking sheet with parchment
paper. Set aside.
